The Unimodem audio device is for modem audio functions. The SoundMAX is the chip that your system uses for sound playback. Unfortunately, SoundMAX chips are common as they are a cheap, integrated sound solution and have NO MIDI synth capabilities whatsoever. The only device listed would be the GS synth you mentioned - an MS software synth based on the Roland SC-55 Sound Canvas. However, the synth is implemented in a newer driver model (WDM) compared to the old driver models in use when Overseer shipped (VXDs).
